Menu Plan Monday



Monday: Red Beans and Rice
Tuesday: Crock Beef Sandwiches, cole slaw, baby carrots
Wednesday: Michelle's Country Ham Chowder
Thursday: Chicken and Artichoke Casserole, steamed baby carrots with brown sugar, brown rice, baked butternut squash
Friday: Texas One Dish, baked sweet potatoes, spinach salad
Saturday: Halibut Marengo, baked potatoes, steamed broccoli, salad
Sunday:Smashing Pumpkin Soup, whole-grain rolls, spinach salad

Smashing Pumpkin Soup
1 tablespoon olive oil
1 onion, chopped
4 cups chicken broth
2 cups pumpkin puree
3/4 cup green onions, chopped
1/8 teaspoon nutmeg
1/2 teaspoon curry powder
salt and pepper to taste
2 cups milk

In a soup pot, heat oil over medium hig heat and saute onions. Cook till very soft and add remaining ingredients, except milk. Cook uncovered for 15 minutes. Add milk and continue to cook (but not boil-it will break) for another 5 minutes.

Serve with a huge spinach salad and whole-grain rolls.

Tuesday: Chicken and Rice Chowder, salad, whole-wheat rolls
Wednesday: Asian Orange Salmon, baked potatoes, steamed carrots, steamed green beans
Thursday: Baked Rigatoni, spinach salad
Friday: Stuffed Quesadillas, leftover salad
Saturday: Red Beans and Rice

Tuesday: Roast Beef Picante, brown rice, baked sweet potatoes, and a salad
Wednesday: Beany Burritos, spinach salad, carrot sticks and ranch dip
Thursday: Moraccan Fish Tangine, brown rice, green peas, and a salad
Friday: Meat loaf, baked potatoes, steamed broccoli, and baked delicata squash
Saturday: Crock Pea Soup, a spinach salad, and whole-wheat rolls

Menu Plan Monday

Monday: Taquitos with salsa and sour cream, salad

Tuesday: Beans and cornbread, steamed green beans

Wednesday: Hamburger Soup, salad

Thursday: Grilled chicken, brown rice, salad, steamed carrots

Friday: Gyros with lettuce, tomatoes, and cucumbers, brown rice

Saturday: Apple Chicken, baked potatoes, baked butternut squash, steamed broccoli

I know it is only Sunday, but I have a few minutes right now to do this and I may not have time in the morning. So, here is my menu! We are trying to eat up all of the Once A Month Cooking meals from September. Then Friday is grocery shopping day and we will start fresh.

I read Saving Dinner Friday afternoon and it looks like a great, healthy plan. I am going to try following Saving Dinner's menus for a month. I am going to shop for one week at a time and see how that works for me.
